COCOmega Breakfast “Jello” (Vegan)

This “Jello” breakfast concoction can include Hemp Protein, Coconut Manna, and Chia Seeds.  The possibilities are endless so try this recipe and then try your own combination!

Ingredients:

1 C Drinkable Coconut Milk, Unsweetened (So Delicious or Trader Joe’s Brand)
1/4 tsp Agar Agar Powder
1 T Nutiva Chia Seeds
1/4 C Nutiva Hemp+Fiber Protein Powder
Nutiva Coconut Manna (optional)
1 Serving Vegan Protein Powder of Choice
Mashed Banana or Berries of Choice
Crunchy Cereal/Grain of Choice
1/8 – 1/4 tsp Sea Salt
Stevia to taste

Directions:

1. In a small saucepan, bring 8oz of coconut milk and 1/4 teaspoon of agar agar powder (whisked in) to a boil, then reduce to a simmer.

2. Stir it periodically with a scraper to prevent caking on the bottom, and watch the pot so that it does not boil over (as it tends to do this suddenly!).

3. Simmer milk for a few minutes until all the agar is dissolved in.

4. Pour the coconut milk into a large cereal bowl, and beat in all the mix-ins! When it is an even consistency, stick it in the fridge (I just leave it there overnight) and it will solidify into a solid block, that you could even later pop out onto a plate. I just eat mine with a spoon. You can drizzle liquid coconut oil/manna over the finished product after stirring, which will solidify as a type of frost on top.

5. While everyday differs a bit, this is my baseline staple, with tons of protein, fiber, Omega-3, and healthy fats. I also throw in a few sublingual B-vitamins, vitamin C, cinnamon, coffee grounds, cocoa powder, vanilla extract, raw eggs, etc. All mix- ins are optional, and as cliche as it may sound…the possibilities really are endless, so get creative and make it YOURS!
