
This recipe goes out to all you brownie lovers out there. A really good Carob brownie can hit the spot after a nice meal and the addition of spearmint, chopped nuts, and coconut oil is a wonderful touch.

Ingredients:
1 cup Nutiva Coconut Oil
4 tbs. Carob Powder
6 tbs. Cocoa Powder
1 cup Raw Sugar
4 Eggs
2 tsp.Vanilla
6 Drops of Spearmint Essential Oil (food grade)
1/2 tsp. Salt
1 1/3 cup Flour ( I used kamut flour)
1 tsp. Baking Powder
1/2 cup Chopped Nuts (I used walnuts)
Directions:
1. Melt coconut oil and carob and cocoa powder in saucepan. Pour into a mixing bowl. Add all other ingredients and mix well.
2. Grease a 9 x 9 inch baking pan. Pour batter into pan.
3. Bake on 350 for 25 – 30 min until done in center.
This recipe has the taste of cocoa with the health benefits of carob as well, with the nice aroma of spearmint.
