Coconut Manna Curry Soup Recipe

Here’s a healthy recipe for Vegetarian Coconut Manna™ Curry Soup!  For fans of Indian food, curries, and coconut Recipes.  Enjoy!

Ingredients:

  • ½ medium onion chopped
  • ½ red bell pepper chopped
  • 2 cloves garlic pressed
  • ½ Zucchini squash diced
  • 1 carrot diced
  • 2 green onions finely sliced
  • 1 celery stalk chopped
  • 1 tbls Nutiva Extra-Virgin Coconut Oil
  • ½ cup of mung bean sprouts
  • 8  tbls Nutiva Coconut Manna
  • 3 cups coconut water
  • 1 lime juiced
  • 2 tsp cumin powder
  • 1 inch fresh ginger chopped
  • 1 tsp turmeric powder
  • ½ tsp nama shoyu
  • 1 tsp cayenne pepper powder

In a medium saucepan sauté the onion, garlic and red pepper in coconut oil.
When the onions are translucent add the three cups of coconut water and bring just to a low simmer.
Add the zucchini, carrots, and celery. Simmer on low until the vegetables are just becoming tender.
Now add the lime juice and cumin, turmeric, ginger and nama shoyu.  Stir well, and turn off the heat.
Let sit for a minute to let the spices dissolve.  Now add 8 tbls (1/2 cup) of Nutiva Coconut Manna and stir well.  Then add the cayenne pepper.
You can use more or less according to heat preference.  Garnish with mung bean sprouts and serve.  Makes 5 cups.

Optional: serve with rice.
