Fig Almond Cookies

This simple cookie recipe is quite the treat and full of delicious Hempseeds, Coconut Oil, and Figs.

Ingredients:

1 cup Dried Figs (I use a mix of mission and others) (dried apricots are good too)
2 cups Almond Flour
2 T. Nutiva Coconut Oil
2T. Nutiva Hempseeds
1 T. Orange Zest (Lemon is good too)

Directions:

1. Place all ingredients in a food processor and mix until completely combined.

2. The dough won’t come together in a ball during processing but you should be easily able to form small balls in your hands. Smaller cookies are better here so use something like 2 tsp. of dough, roll into a ball and flatten a bit.

4. Place on a parchment or silicon baking sheet lined pan. (I put a bit of coconut oil on my hands to make rolling easier). Bake in a 350º oven for about 10 minutes, turning pan halfway through for more even baking.

    That sounds so yummy — I’m definitely going to try that. I wonder how long it would need to be in a dehydrator though?
