Holiday Apple Cinnamon Cake

Here is a great Holiday Apple Cinnamon Cake with Coconut Oil and Coconut Manna so you can start your holiday celebrations early!

Ingredients:

Apple Cinnamon Cake:

2 cup Almond Flour
1/2 tsp Baking Soda
1/4 cup Arrowroot Powder
1/4 cup Nutiva Coconut Oil
1/2 cup Honey
1 Granny Smith (or tart apple of your choice)
Peeled, Cored, and Diced
1 tbs Pure Vanilla Extract

To prepare cake pans:

1 tbs Nutiva Coconut Oil
2 tbs Almond Flour

Cinnamon Icing:

1/2 C. Lite Coconut Milk
2/3 C. Arrowroot Powder
4 tbs Nutiva Coconut Manna
3 tbs Honey
2 tbs Maple Syrup
2 tsp Cinnamon
1 tsp Pure Vanilla Extract

Directions:

1. Preheat oven to 350 F.

2. Using 1 tbs coconut oil, grease (2) 7-inch pans and “flour” with almond flour. Set aside.

3. Combine all dry ingredients in a medium-sized bowl.

4. In a small bowl, combine wet ingredients. Pour wet ingredients in with dry and stir until just combine.

5. Last, add apples. Stir gently to incorporate apples throughout batter.

6. Pour equally into both pans and heat for 20 minutes, or until a toothpick can be inserted into the center of the cakes and removed easily. Allow cake to cool completely before icing.

7. For icing, whisk coconut milk and arrowroot powder in a small bowl until smooth.

8. Add remaining icing ingredients.

9. Frost cake and garnish with leftover apple peels.

Refrigerate leftovers…if there are any!
