Ingredients:
1/2 cup Nutiva Organic Extra-Virgin Coconut Oil
1/2 cup turbinado sugar
1 tsp. vanilla
2 eggs, beaten
1/2 cup sorghum flour
1/4 cup brown rice flour
1/4 cup coconut flour
3/4 tsp. sea salt
1/2 tsp. baking soda
Directions:
Cream together oil and sugar until light and fluffy. Add vanilla and eggs, stir to combine. In a separate bowl, mix together flours, salt, and baking soda. Add dry ingredients into the wet and gently fold together. You can bake immediately, but the cookies set up a bit better if you refrigerate the dough for 10 – 15 min. first. Bake at 350 for 7 – 8 minutes.

Perfect timing! I am baking with my daughter on Friday and we are doing “sugar cookies” I have the coconut flour and most of the other ingredients so should be a great cookie for Christmas. I always use coconut oil. It is so yummy.
Can we substitute the flours for Robin Hood plain white flour?
Sure, white flour will work, though I suspect the measurements would vary a bit.
