How To Make Brownies – (Suzie Q Style) | Recipe

At 11:30pm on some arbitrary Thursday..I think it was last week…( the days have all melted together like a bowl of tasty trips to the skating rink, basket ball practice, long floor mopping sessions, diaper change after diaper change & daily yerba mate shots ) I got this wild hair in my ear in the form of Taylor’s persuading voice asking me to pretty please make brownies.

The baby was asleep, the daughter was off to a friends for a sleep over and I was just about to sit down to a couple minutes of tweeting, but a brownie suddenly sounded good to me too. I was so glad I had bought that gluten-free brownie mix at Trader Joes; it made the brownie mixing way easier, though I have to say I didn’t think they were going to turn out as good as they did.

I’m confident I could use any brownie mix and make it vegan. Shoot, I think I could make a mean batch brownies from scratch and adapt any recipe making it gluten free and vegan and I know you can too! I used no eggs and no xanthan gum although that is what the package calls for. I did it Suzie Q Style.

These brownies are vegan and gluten free–

I threw away the empty brownie mix package but basically this is all you have to remember to get in addition to the Gluten Free Baking Mix at Trader Joes:

3 TBS Organic Chia Gel*
7 TBS Nutiva Hempseed
4 TBS Nutiva Coconut Manna™
1/4 C Almond milk

Chia Gel*
*Thick Chia seed Gel Recipe:
2 TBS Nutiva Chia Seed
4oz water
Directions:
Add Chia seeds to a blender or food processor and blend into a fine powder.
Add Chia seed powder to water mix well and let sit for 10 min

(BTW I love Chia seeds! They make you full, have tons of fiber, protein minerals and are the best egg replacer–you can’t go wrong with them.)

Directions

Follow the directions on the package mixing wet ingredients and dry ingredients separately.

1. Pre Heat your oven I think the package says 375 degrees

2. Instead of eggs use chia gel. Instead of the water called for use almond milk
(about 1/4 C). mix well in a semi largish bowl

3. Don’t forget to add the baking soda that is called for into the dry mix then slowly add the dry mix to the wet ingredients.

4. Grind about 6TBS hemp seeds and add to the batter (I always have ground hemp seeds in a glass jar ready to go for baby food etc)

5. Grease an 8 by 8 inch glass pan with coconut oil

6. Pour the batter in and coat the top with a thin layer of hemp seeds

7. I can’t recall how long to bake them and I personally forget most times to set the timer I go by how it smells. Just remember to let cool for at least 20-30 min

8. I like to add Coconut Manna to finish it off. This is a fancy whole coconut food, similar to coconut butter. Its basically just dehydrated coconut meat that of course still retains the coconut oil and has a consistency like frosting at room temp.
Decorate with the coconut Manna and try not to eat them all at once!
