Mixed Vegetable Burgers

Take your veggies for a spin with this Veggie Burger recipe.  Experiment with your favorite types of vegetables and saute them with Coconut Oil to maximize your burger’s flavor.

Ingredients:

1 pkg, frozen (or fresh) mixed vegetables, thawed and cooked crisp tender and drained
2 Tbs Cilantro Leaves
1 Tbs Parsley Leaves
1 Tbs Flax Seed Meal
1/2 of a Small Onion
1 tbs Nutiva Coconut Oil
1 Organic Egg
1 large Clove Garlic
1 Tbs Organic Cornmeal or Whole Wheat Flour
1 tsp Cumin
Salt and Pepper to Taste

Directions:

1. In a food processor with metal blade, chop the onion, garlic and herbs.

2. Add the remainders except the flax seed meal and flour.

3. Chop mixture into a coarse paste but not into a puree.

4. Blend in the flour and flax seed meal to form a thick mixture, adding a bit more flour if needed

5. In a non stick skillet over medium high heat, heat up 2 to 3 Tbs coconut oil.

6. Form the vegetable mixture into about 6 patties.

7. Fry in the hot oil, turning with a spatula until the patties are well browned on each side

8. Serve in buns
