Holiday – or ANY day – Coconut Manna Rum Balls

These marvelous rum balls are perfect for dessert fans who don’t want to sit down to an entire piece of cake.  Great for those people who always ask you to slice them a piece so thin that you need a special ceramic knife to accommodate them.  Now, just hand them one of these little guys!

It’s also the perfect item to bring to your next pot-luck.  They’re easy to make, inexpensive, and because of their bite-sized servings, a little goes a long way!

Ingredients:

1 cup Nutiva Coconut Manna
1/2 cup Coconut Sugar (Palm Sugar)
1 1/2 cup nuts (walnuts, pecans, hazelnuts, almonds, whatever one wants)
1/2 cup raisins (or dates, or figs)
4 tablespoon Cacao Powder
3 tablespoon Rum
2 tablespoon dried Coconut Meat (shredded)
1/2 teaspoon cinnamon
1/2 teaspoon chili powder (yes, really)

Directions:

1. Mix the manna with sugar, knead it for a while until it stops being crumbly and has the consistency of butter

2. In a food processor shred the nuts and raisins, add them to the manna mixture. Add 2 tbs coco powder and 3 tbs rum, mix well.

3. Form small balls.

4. Mix the remaining coco, cinnamon and chili powder, roll the balls in the mixture.

5. Put the balls in a fridge for an hour.
