Superfood Guilt-Free Fudge

Try these delectable Superfood Guilt-Free Fudge!  These bad boys are filled with Coconut Manna, Coconut Oil, Coconut Manna, and Hempseed.

Ingredients:

5 oz. Nutiva Coconut Manna
3 oz. Nutiva Extra Virgin Coconut Oil
12 oz. 62% Cacao Chocolate Baking Chunks (I used “private selection” brand)
6 oz. Nutiva Organic Hulled Hemp Seeds (divided)
1 1/2 cup Toasted Almond Slivers
1 c Dried Cherries (chopped)
1/8 t Pure Almond Extract

Pinch of Smoked Sea Salt or a coarse ground Kosher Salt
Parchment Paper

Directions:

1. Line an 8×8 baking pan with parchment paper.

2. Toast almonds in a single layer in the parchment-lined baking pan for 10 minutes in a preheated 400 degree oven. Transfer toasted almonds to a separate bowl to cool.

3. Sprinkle smoked sea salt or kosher salt evenly on the parchment in the baking pan.

4. Layer half of the Nutiva Organic Hulled Hemp Seed on top of salt (be sure to spread evenly so all edges and corners are covered with hemp seeds).

5. Next, layer toasted almond slivers evenly on top of the hemp seeds.

6. Finish with an even layer of chopped dried cherries.

7. Combine Cacao chocolate chunks with the Nutiva Organic Extra Virgin Coconut oil, and Nutiva Organic Coconut manna in a glass bowl.

8. Microwave the Coconut oil, Coconut Manna and chocolate chunks for 60 seconds, then stir for 2-5 minutes to help facilitate even melting. continue heating in 30 second intervals, stirring 2-5 mins between microwaving until the chocolate mixture is smooth and creamy. Then add the pure almond extract and stir for another minute.

9. Gently pour coconut chocolate mixture over the Nutiva Organic Hulled Hemp Seeds, almonds, and dried cherries that are leyered in the parchment -lined pan.

10. Sprinkle the other half of the Nutiva Organic Hulled Hemp Seeds on top of the melted chocolate mixture and gently press into the warm chocolate.

11. Refrigerate for approximately 2 hours. Then remove the pan from the fridge and lift the superfood guilt-free fudge from baking pan, parchment and all. Then, using a large knife, cut the fudge into 1” strips lengthwise and then cut strips into 1” chunks crosswise. This fudge is best enjoyed by eating each piece in one bite!

12. Store leftover superfood guilt-free fudge in the refrigerator but be sure to allow this creamy nutty confection to come to room temperature (68-70 degrees) before serving.

    yum! i made these again yesterday using pecan instead of walnuts and with 62% cacao chocolate chunks. also put the salt on the bottom so it hits your tongue sooner ; )

    don’t like microwaving foods..I would like to see more of preparing raw foods here. So all the nutrient properties stay intact with the food we eat. TY

      We hear you. I haven’t personally owned or used a microwave since the ’90s. Keep your eye on this site. We’ve got some very exciting developments in the works regarding the Nutiva Recipe Club.

      Do keep in mind that most of our current recipes are fan submitted. We encourage people to share their ideas with us, regardless of whether those ideas are raw vegan, paleo, vegetarian, etc.

      We don’t post the few recipes we get which we find to be dangerously unhealthy, but we will continue to allow our fans to share what they love.
