Thai Coconut Lime Noodles

Ingredients:

2-4 Tbs Minced Fresh Garlic
2-4 Tbs Minced Fresh Ginger
4 Tbs Nutiva Coconut Oil
6 oz Nutiva Coconut Manna
2+ Cups Veg/Chicken Broth or Water
1 Tbs Soy Sauce
1-2 Tbs Fish Sauce
2 Limes, Zested and Juiced
Chopped Fresh Cilantro (to taste)
Chopped Roasted Peanuts (garnish)
Chopped Hot Pepper or Crushed Red Pepper Flakes (to taste, optional)
8 oz Rice Noodles (any thickness, medium is best)

Directions:

*Please adjust seasonings according to your taste!

1. Drop rice noodles in boiling water, cook according to package directions. Drain and run under cool water or they will be very sticky.

2. Saute chopped garlic and ginger in coconut oil for a few minutes until softened and releasing flavors.

3. Add broth/water and heat until hot but not boiling.

4. Add coconut manna and stir/whisk until dissolved (you can adjust the amount of broth/water depending on how thick you want the sauce).

5. Add soy sauce, lime zest and fish sauce, simmer a few minutes.

6. Add lime juice, remove from heat.

7. Add rice noodles to sauce and stir to coat.

8. Dish out and garnish with lots of cilantro, peanuts and hot pepper if you like it spicy.

Variations: Cooked shrimp or cooked, shredded pork/chicken can be added to turn into a meal. Can also add shredded carrots, peas, or other diced vegetables. Without rice noodles, can be served over rice or other starch. Thin with more broth for a great soup.
