Ingredients
- 1 c shredded red cabbage
- 1 c shredded green cabbage
- 1.5 c shredded carrots
- 1 c chopped kale
- 1/3 c chopped cilantro
- 1 c snap peas
- 2 c cooked quinoa
- 2 tbsp sesame seeds
- 1/4 c finely chopped cashews
- Chopped green onion (for topping)
Dressing
2 tbsp coconut aminos
2 tbsp rice vinegar
2 tbsp olive oil
1/2 tbsp maple syrup
2 tsp lemon juice
1/4tsp ground ginger
Directions

Whisk together all dressing ingredients until combined.

Add all salad ingredients to a bowl and toss to combine. Pour on dressing and toss to mix.

Add on green onions + extra sesame seeds to garnish and enjoy!
