Ingredients:

1 Tbsp. Nutiva Organic All-Purpose Coconut Oil
- 1lb ground pork
- 5 garlic cloves, roughly chopped
- 3 red Thai chili, thinly sliced
- 3 Tbsp. toasted shredded coconut
- 2 Tbsp. michu or dry sake
- 1 Tbsp. fish sauce
- 2 Tbsp. Coconut Secret Seasoning Sauce and Marinade
- ½ cup Thai basil leaves
- fried egg and steamed white rice, for serving
Instructions
1. Heat the coconut oil in a wok or large pan over high heat until the oil is shimmering.
2. Add the pork, let it sear for 2 minutes then stir while breaking it apart until browned, about 2 more minutes.
3. Stir in garlic and red thai chili, cook until fragrant, about 1 minute.
4. Add in 1 Tbsp. toasted shredded coconut, michu, fish sauce and seasoning sauce, stir until all the pork is coat with sauce.
5. Turn the heat off and stir in the basil leaves.
6. In serving bowls, divide steamed white rice and top with spicy coconut fried pork. Sprinkle with the rest of toasted coconut and serve with a fried egg.
