Thai Crunch Salad

Ingredients

Salad:

  • 1 cup of shredded red cabbage
  • 1 cup of shredded green cabbage 
  • 1.5 cups shredded carrots
  • 1 cup of chopped kale
  • 1/3 cup chopped cilantro
  • 1 cup snap peas
  • 2 cups cooked quinoa
  • 2 tbsp sesame seeds
  • 1/4 cup finely chopped cashews
  • Chopped green onion (for topping)

Dressing:

2 tbsp Organic Original Coconut Aminos

2 tbsp rice vinegar

2 tbsp olive oil

1/2 tbsp maple syrup

2 tsp lemon juice 

Instruction

  1. Whisk together all dressing ingredients until combined.
  2. Add all salad ingredients to a bowl and toss to combine. Pour on dressing and toss to mix.
  3. Add on green onions + extra sesame seeds to garnish and enjoy!
